27. Sazerac
Ingredients:
– 5cl Cognac
– 1 cl Absinthe
– 1 sugar cube
– 2 drops of Peychaud's bitter

The cocktail is prepared by flavoring the glass in which it will be served with absinthe. Then place the absinthe in a tumbler with crushed ice and set aside.
While the glass takes the sign of the “green fairy”, in un mixing-glass si mescolano cognac e una zolletta di zucchero, imbevuta di Peychaud bitter e disciolta in poca soda with a bar spoon.
Finally, empty the contents of the tumbler (with any residual absinthe) and filter the drink prepared in the mixing glass inside the tumbler and serve without ice.
Garnish with lemon essential oils.
